An easy recipe for a famous cookie. The thin batter is transformed, in baking, into a crisp round with open spaces resembling lace. The rolled-up version is popular in Sweden; cooks there roll the warm cookies around a piece of broom handle. 1 c. nuts, finely chopped 1/2 c. corn syrup 1/2 c. shortening 2/3 c. brown sugar, packed
Heat oven to 375 degrees. Measure flour by sifting. Blend flour and nuts. Bring corn syrup, shortening and sugar to boil in saucepan over medium heat, stirring constantly. Remove from heat; gradually stir in flour and nuts. Drop batter by level teaspoonfuls about 3 inches apart on lightly greased baking sheet. (Bake only 8 to 9 cookies at a time.) Bake 5 to 6 minutes; remove from oven and allow to stand 3 minutes before removing from baking sheet and rolling them on a wooden dowel around a half in thick. Makes about 4 dozen cookies.

CREAM CHEESE CHRISTMAS COOKIE
INGREDIENTS..............
1 cup butter, softened
1 (8 ounce) package cream cheese
1 cup white sugar
1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup chopped pecans
1/2 cup green sugar crystals
1/2 cup red sugar crystals
1 cup pecan halves
DIRECTIONS
Cream together the butter and cream cheese. Add sugar and vanilla; beat until light and fluffy.
Combine the flour and salt; gradually add to creamed mixture, beating until well blended. Stir in chopped pecans. Cover bowl with plastic wrap and refrigerate for 15 minutes.
On four sheets of aluminum foil, shape dough into four 6 inch rolls, 1 1/2 inches in diameter. Wrap each roll tightly in foil and refrigerate over night.
Preheat oven to 325 degrees F (165 degrees C). Line cookie sheets with foil. Remove rolls of dough from refrigerator one at a time. Coat each roll with red or green sugar crystals; cut dough into 1/4 inch slices.
Place on prepared cookie sheets; top each cookie with a pecan half. Bake for 15 to 18 minutes or until bottom of cookie is lightly browned when lifted.

Candy Cane Bar Cookies
1 cup butter (2 sticks)
1 cup white granulated sugar
1 egg
1\4 teasp. Peppermint extract
1\2 teasp. Salt
2\3 cup finely crushed miniture candy canes (measure after crushing)
6 drops red food coloring
2 cups packed flour
1 cup chocolate chips (6 oz. bag)
2 cups chocolate chips (12 oz. bag)
Melt the butter in a microwave safe bowl for 1 minute 30 seconds on high. Set it on the counter to cool.
Place the sugar in the bowl add the egg, and beat with a mixer until it鈥檚 a uniform color.
Add the peppermint extract, salt, and finely crushed minitature candy canes. Mix it all up.
Add the 6 drops of red food coloring. Mix it in thoroughly.
Feel the bowl with the butter. If you can cup your hands around it comfortably, you can add it to your mixing bowl now. Mix it in slowly at low speed. If it鈥檚 still too warm to add, wait until it鈥檚 cooler and then do it.
Add the flour in half cup increments, beating after each addition.
Stir in one cup chocolate chips by hand.
Spread the batter evenly into a greased 9-13 inch pan. Bake at 350% for 25 minutes or until it feels firm on the top.
Remove the pan from the oven and sprinkle it with the remaining two cups of chocolate chips. Immediately cover with a inverted cookie sheet. Let it sit for three minutes. Then take of the cookie sheet, and spread out the melted chips like frosting with a spatula.
Cool completely and then cut into brownie sized squares.
Well I got this recipe off the internet a few years ago and it's great, it can be made for Thanksgiving or Christmas. The only problem is though it is sooo fattening. I hope you have a lot of butter if you make it ;).
Though I usually put 1/2 tsp of mace and a 1 tsp of cardamom in it as well. It makes a nice crust because it does not rise much with just one egg.
* Crust
* 1 box of butter recipe yellow cake mix
* 1 egg, slightly beaten
* 1 stick butter or 8 tbsp. margine, melted
* Filling
* 1 8 oz. pkg. of cream cheese, softened
* 1 15 oz. can of pumpkin
* 3 eggs
* 1 tsp. vanilla
* 1 stick butter or 8 tbsp. margarine, melted
* 1 (16 oz. ) box of powdered sugar
* 1 tsp. of cinnamon
* 1 tsp . of nutmeg
Directions
1. Preheat oven to 350*
2. Prepare mix.
3. Pat mixture in bottom and sides of a greased 13x9 pan (like a pie).
4. Prepare filling.
5. Mix together the cream cheese and pumpkin until smooth.
6. Add eggs, vanilla, and butter and beat together.
7. Add the powdered sugar, cinnamon, and nutmeg and mix well.
8. Spread pumpkin filling in the cake crust mixture.
9. Bake for 45 minutes.
10. Do not overcook - should be gooey.
11. Cut like brownies and top with whipped cream.
Almond Chocoltae Cookies
INGREDIENTS
225 g butter (no substitutes), softened
165 g packed brown sugar
135 g sugar
45 g baking cocoa
10 ml almond extract
5 ml vanilla extract
2 eggs
280 g all-purpose flour
5 g baking soda
DIRECTIONS
In a mixing bowl, beat the butter, sugars, cocoa and extracts until creamy. Add eggs, one at a time, beating well after each addition. Combine the flour and baking soda; gradually add to sugar mixture. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375 degrees F for 7-9 minutes or until edges are firm. Remove to wire racks to cool.
It is really simple but everybody loves it.
Peanut Butter Chocolate Chip Cookies
1 Egg
1 Cup Sugar
1 Cup Peanut Butter
semi sweet Chocolate chips ( I usally just eyeball it)
Preheat oven to 350
Mix the eggs then mix the sugar in with the eggs, and the peanut butter and mix
After it is all mixed, put in the chips.
Do not grease pan
Use an ice cream scoop for round cookies
Cook for about 8-10 mins. Depending on your stove.
