1 stick unsalted butter(softened)
2/3cup creamy peanut butter
3/4cup packed darkbrown sugar
1/4 cup granulated suga
1 teaspoon vanilla extract
1 egg
1 cup all-purpose flour
1/2 teaspoon bakingsoda
1 1/3 cups semi sweet chocolate chunks
don't do this this just yet
first
get a medium bowl using an electric mixer
beat the butter, peanut butter, sugars and vanillaun til well combined.beat the egg. put it in
scrape down the bowl using a rubber spatula
in a small bowl whisk together the flour and baking soda.
add the dry parts to the liquid parts.
and mix on slow speed until absorbed
put the chocolate chunks in the bowl with every thing in it.
stir into mixture.
1 table spoon each cookie
3 inches apart
UNGREASED BAKING SHEETS
bake for about 12 min
let it sit for 2 min
and now w/ food coloring draw little bunnys on each cookie

For some reason coconut has always been associated with easter so I would take chocolate cupcakes cover them with marshmellow fluff and then top with green colored coconut flakes. Then in the middle of the top put some jellybeans. It looks like eggs in grass, but tastes great!
These are some of my favorites desserts/cookies:
CORELLIAN COCONUT OATMEAL COOKIES DIPPED IN CHOCOLATE
1 cup Flour
1 tsp Baking Powder
陆 tsp Baking Soda
1 tsp Salt
戮 cup Butter 鈥?softened
1 2/3 cup Sugar
2 Eggs 鈥?large or bigger (I prefer to use Jumbo)
1 陆 tsp Pure Vanilla Extract
2 陆 cup Quick Oats
1 cup Flaked Coconut
16 oz Milk Chocolate - Melted (I prefer Droste a Milk Chocolate candy bar from Holland)
Preheat oven to 375 F.
Stir together flour, baking powder, baking soda, and salt; set aside. Cream together butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in flour mixture, vanilla and oats. Add coconut. Bake for 10-15 minutes, or until lightly browned at the edges. Cool on a wire rack. One cool dip half of each cookie in the melted chocolate and let harden. Makes about 60 cookies. Cookies will spread when baking.
BAILEY'S IRISH CREAM FUDGE
3\4 cup Butter, softened
3 cups Sugar
2\3 cup Evaporated Milk
1 12 oz pkg Semi-sweet Chocolate Chips
7 oz jar Marshmallow Cr猫me
1 陆 cup Chopped Nuts (optional)
2 shots Bailey's Irish Cream (or one small bottle 鈥?airplane size)
Combine butter, sugar and evaporated milk in a heavy 3-quart saucepan. Slowly bring to a rolling boil and cook for 5 minutes, stirring consistently. Add chocolate chips, stir until melted and well mixed. Add marshmallow cr猫me and mix well. Stir in nuts and Bailey's Irish Cream and mix well. Pour mixture into a 9 x 9 (for thick pieces) or 2 9 x 9 pans or 1 8 x 10-inch pan (for thinner pieces) that have been prepared with cooking spray. Cover with plastic wrap or wax paper and allow to cool for at least 4 hours. Turn fudge out onto waxed paper or plastic wrap and cut into 1-inch cubes. Store tightly covered or wrapped.
LEMON BARS
Bottom Lemon Cake Ingredients:
16 ounces store bought angel food cake mix
1 (22-ounce) can lemon pie filling
1 cup finely shredded coconut
Bottom Lemon Cake: In mixing bowl, combine cake mix, pie filling, and coconut. Stir until thoroughly mixed (do not add any liquid). Spread this mixture in a 10 by 15-inch baking pan. Bake for 30 minutes in a preheated 350 degree F oven. Cool.
Top Creamy Frosting Ingredients:
8 ounces cream cheese, softened
1/2 cup butter, softened
2 1/2 cups powdered sugar
1 teaspoon vanilla
Lemon zest, for garnish
Top Creamy Frosting: Combine all ingredients until blended well. Frost the Bottom Lemon Cake. Garnish with sprinkles of lemon zest and cut into 1 1/2 by 2 1/2 inch bars. Cover and refrigerate overnight for better flavoring.
APPLE PIE
Pie Crust:
2 cups all-purpose flour
戮 teaspoon salt
1 cup vegetable shortening, room temperature
1 egg
2 tablespoons cold water
1 tablespoon white vinegar
Apple Filling:
5 Northern Spy apples
戮 cup fine sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon
Combine the flour and salt in mixing bowl. Cut room temperature shortening into flour until mixture is uniform and shortening resembles large peas. Beat egg, water, and vinegar together to blend. Pour all of the liquid evenly over flour mixture. Stir in with fork until all of the mixture is moistened. Divide dough in half and shape each into a ball. Flatten each into a 4-inch circle. Wrap and chill dough for 15 minutes for easier rolling.
Dust rolling pin and work surface lightly with flour. Roll dough to a uniform thickness. Roll to a circle about 1-inch larger than upside down 8-inch pie plate. Carefully place one dough circle into pie plate and gently press into form of plate. Trim excess dough around the edge with the back of a knife.
Preheat oven to 400 degrees F.
Peel, core, and slice apples. Mix apple slices with sugar, flour, and cinnamon. Place apple mixture in pie shell. Place second pie crust on top and form to the edges of the pie plate. Cut slits in the top crust to allow for steam to release in oven. Bake for approximately 30 to 40 minutes, until pie is fully baked and apples are tender.
BLACK AND WHITE BROWNIES
12 ounces semisweet chocolate
陆 cup butter
For the cream cheese batter:
6 tablespoons butter
9 ounces cream cheese
戮 cups sugar
3 eggs
3 tablespoons flour
1 tablespoons vanilla
For the chocolate batter:
6 eggs
2 录 cups sugar
1 陆 cups flour
1 陆 teaspoons baking powder
1 陆 teaspoons salt
1 tablespoons vanilla
戮 teaspoons almond extract
Preheat oven to 350 degrees F.
Melt chocolate and 陆 cup butter and set aside to cool.
To make the cream cheese batter, with a whip attachment cream 6 tablespoons butter than add the cream cheese and continue mixing. Add the sugar, beat until fluffy then beat in the eggs, then flour, and vanilla. Set aside.
For the chocolate batter, in a separate bowl whip the eggs and sugar until fluffy. Stir together the flour, baking powder, salt, and mix into egg mixture. Mix in the melted chocolate and butter, and the extracts.
In a rectangular pan, lined with parchment, spread half the chocolate mixture. Spread the cream cheese layer over that to cover, then drop remaining chocolate batter by spoonfuls on top then swirl with a knife. Bake for 40 minutes. Cool and cut into bars.

Italian Cream Cake
1/4 lb butter, softened
1/2 cup shortening
2 cups sugar
5 eggs, separated
1 cup buttermilk
1 teaspoon baking soda
2 cups all-purpose flour
1 teaspoon vanilla
1 cup shredded coconut
1/2 cup chopped pecans
CREAM CHEESE FROSTING
1(8ounce)package cream cheese, softened
1/4 lb butter, softened
1 teaspoon vanilla
1 box powdered sugar
1/2 cup chopped pecans
Directions
1Preheat oven to 325 degrees F.
2For cake: Cream butter, shortening and sugar.
3Add egg yolk one at a time, beating after each addition (this is an important step!) Stir in baking soda and buttermilk.
4Add sifted flour into batter, alternating with the buttermilk mixture.
5Add vanilla, coconut and chopped pecans.
6Beat egg whites and fold into batter.
7Pour into a greased and floured 9X 13-inch cake pan for a sheet cake, or two 9-inch round cake pans for a round layered cake.
8Bake for 45 minutes, or until cake tests done.
9Remove from oven, cool completely before frosting.
10For frosting: Beat cream cheese and butter.
11Add vanilla, powdered sugar, and pecans.
12Continue to beat until you get a spreading consistency.

Nutty-Noodly Clusters:
1-12 oz. package chocolate chips
1-12 oz. package butterscotch chips
6 oz. LaChoy Chow Mein Noodles (the dry ones)
1/2 cup cashews
Melt chocolate and butterscotch chips in a double boiler, over low heat, stirring constantly. (If you don't have a double boiler, use a pan on the bottom with a little water in it, and a metal bowl on top, or other smaller pan on top, with the chips in it.) Remove from heat and quickly stir in noodles and nuts so they are evenly coated. Drop out by teasponsful onto wax paper, chill and refridgerate. They melt easily so make sure you keep them cool. Yummy!!!!
Makes 24 clusters.

Cherry Delight Salad
1-21oz. can Cherry Pie Filling
1-12oz tub Cool Whip
1-14oz can sweetened condensed milk
1-20oz can crushed pineapple (drained)
3- bananas, sliced
4-6 mini Snickers candy bars, cut up bite size
1/2 cup-dry roasted peanuts (chopped up)
3-4 large sliced strawberries (optional)
Mix together in large bowl, refrigerate and serve.
