The oatmeal smore cookie recipe is one of my favorites. It has all the flavors of a smore, but in a smaller, more subtle portion.
Ingredients
1/2 cup salted butter, softened
1/2 cup shortening
1 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup old-fashion oats
1 cup (6 ounces) semi-sweet chocolate chips
1 cup miniature marshmallows

Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a medium bowl, whisk together flour, baking soda, and salt; set aside.
Step 4: In a large bowl, cream together butter, shortening and sugars.
Step 5: Add eggs one at a time, beating well after each addition.
Step 7: Beat in vanilla extract.
Step 8: Gradually add flour mixture and mix well.
Step 9: Stir in oats, chocolate chips, and marshmallows.
Step 10: Form dough into teaspoon size balls, pace on prepared cookie sheets 2 inches apart.
Step 11: Bake 11-13 minutes or until golden brown. Let cookies set for 2 minutes, then transfer to cooling surface.

SMORE COOKIE BARS
makes 3 dozen bars
9 ounces Hershey's milk-chocolate candy bars (or other brand), cut into pieces
1 cup mini-marshmallows
1/3 cup unsalted butter, room temperature
1/3 cup vegetable shortening
2/3 cup firmly packed brown sugar
1 egg
1/2 teaspoon vanilla extract
1 cup graham cracker crumbs
2/3 cup all-purpose flour
1/4 teaspoon salt
6 tablespoons whipping cream
Preheat oven to 350 degrees. Grease a 9-by-13-inch baking pan.
Combine butter, shortening, brown sugar, egg and vanilla in a medium bowl. Beat at medium speed of electric mixer until well blended.
Combine graham cracker crumbs, flour and salt. Add to creamed mixture. Mix at low speed until just blended. Spread dough evenly into prepared pan.
Bake in preheated oven 15 minutes, or until edges are lightly browned and set. (The center of the crust will still be a little soft.) Cool completely.
Place cream in a heavy saucepan and bring to a simmer. Remove from heat. Add chocolate pieces. Stir until melted and smooth. Stir in marshmallows.
Spread evenly over cooked crust. Refrigerate until firm, about 2 hours, before cutting into bars.Smore cookie recipe??
3 cups graham cracker crumbs
3/4 cup butter or margarine, melted
1/3 cup sugar
3 cups miniature marshmallows
12 ounces semi-sweet chocolate chips
Combine the crumbs, butter and sugar; press half into a greased 13x9x2 inch baking pan.
Sprinkle with marshmallows and chocolate chips.
Top with remaining crumb mixture; press firmly.
Bake at 375 degrees for 10 minutes.
Remove from the oven and immediately press top firmly with spatula.
Cool completely and cut into bars.

On cookie sheet:
12 graham crackers
Top with:
2 c. mini-marshmallows
6 oz. chocolate chips
1/2 c. peanuts
In saucepan on low heat:
1/2 c. butter
1/2 c. brown sugar
Cook until it dissolves and add 1 teaspoon vanilla. Drizzle over crackers. Bake 10 minutes at 350 degrees
