Does anybody have a recipe for a sugar-free cookie cake?

My wife is diabetic and my daughter would really like to make her a cookie cake for her birthday. She came home from school with this ';great idea'; for her mom's birthday. I am not much of a cook (pretty much no culinary skills) so a recipe and any additional instructions and tips would be greatly appreciated. Does anybody have a recipe for a sugar-free cookie cake?
My husband is diabetic, and I've found that you can substitute Splenda for sugar in just about any cookie or cake recipe. Just be careful to read the Splenda bag; since there's a baking blend that's double strength (regular Splenda is an equal substitution). It works particularly well in cheesecake; with crushed sugar-free cookies (storebought) as the crust; although I've made scones, peanut butter cookies, banana bread, brownies, etc. Here's a recipe for a COOKIE PIZZA, which you can top with whatever you want:)





COOKIE PIZZA


1/2 c. brown Splenda


1/4 c. white Splenda


1/2 c. softened butter


1 tsp. vanilla


1 egg


1-1/2 c. all-purpose flour


1/2 tsp. baking soda


TOPPINGS


Heat oven to 375. In large bowl, mix Splendas, butter, vanilla %26amp; egg with spoon until blended. Stir in flour %26amp; baking soda (dough will be stiff). On ungreased 12'; pizza pan, spread or pat the dough to cover pan. Bake 10 min. Take it out and sprinkle with whatever ';toppings'; you want (sugarfree gum drops, chocolate chips, Craisins, nuts, any chopped chocolate or nut candy, etc). Bake another 10 minutes, or until edge of crust is golden brown. Cool in pan 30 min. ... cut in wedges to serve





If she can have a little sugar, then put 1/2 c. white or regular chocolate chips with 1 tsp. shortening in a small resealable food-storage bag. Microwave on High 1 min. Squeeze bag until chips are melted and smooth. Cut off tiny corner of bag; drizzled melted chips over cookie. Let stant about 30 min, or until set....Does anybody have a recipe for a sugar-free cookie cake?
I am diabetic on insulins and oral meds both and would much rather have a ';real cake'; or a ';real cookie cake'; than any of the junk that is sugar free.





the sugar in the cake is just a tiny dab of the ';sugars'; your wife has to watch. The white flour in any of them is the killer item. So totally sugar free is a bad bad idea. It means there is no flour in the cake either!!





Just make some good sugar cookies of graduated sizes and stack them up into a pyramid shape
