Oatmeal Bars

1 1/2 cups rolled oats

1 1/2 cups all purpose flour

1/2 teaspoon salt (or a little more)

1 cup brown sugar

2/3 cup vegetable oil

1/4 cup plus 2 tablespoons hot water

1 teaspoon baking soda

2/3 cup raisin

Stir together the oats, flour, salt raisins and brown sugar. Dissolve the

soda in the hot water (measure the soda carefully because too much leaves a noticeable taste in this recipe). Add the oil and the

soda mixture to the dry ingredients, mixing well with a wooden

spoon. Pat mixture flat into a small cookie sheet. Cut into

squares and bake at 350 degrees. Do not overcook, cookies should remain soft and chewy.
The Q brand of oatmeal has an easy to follow recipe on the inside of the container's cover. I use it everytime

Whisk together and set aside

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon kosher salt

Cream wet ingredients

1 cup unsalted butter, softened

1 cup sugar

1 cup dark brown sugar, firmly packed

2 large eggs

2 teaspoons vanilla

Then stir in

3 cups oats (not instant)

1 1/2 cups raisins

Preheat oven to 350掳.

Whisk dry ingredients; set aside.

Combine wet ingredients with a hand mixer on low.

To cream, increase speed to high and beat until fluffy and the color lightens.

Stir the flour mixture into the creamed mixture until no flour is visible.

(Over mixing develops the gluten, making a tough cookie.) Now add the oats and raisins; stir to incorporate.

Fill cookie scoop with dough.

(Use a #40 cookie scoop; it measures 2 tablespoon of dough) Press against side of bowl, pulling up to level dough.

Drop 2-inches apart onto baking sheet sprayed with nonstick spray.

Bake 11-13 minutes (on center rack), until golden, but still moist beneath cracks on top.

Remove from oven; let cookies sit on baking sheet for 2 minutes before transfering to a wire rack to cool.
the quaker oats oatmeal carton has an easy and tasty recipie for the cookies.
Oatmeal and Raisin Spice Cookie Bars:

30 min 15 min prep

30 servings

30 bars

1/2 cup soft margarine or butter

1/2 cup brown sugar

1/3 cup white sugar

1 egg

1/2 teaspoon vanilla

3/4 cup all-purpose flour

1/4 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon allspice

1/4 teaspoon ginger

1 1/2 cups rolled oats

3/4 cup raisins

1. Brush a 13 x 9 inch baking dish with oil, then line with parchment paper or foil, pressing paper down firmly so it stays. Leave a slight overhang of paper.

2. In mixing bowl cream the margarine or butter until light. Add the sugars and beat until smooth. Add the egg and vanilla and mix in well.

3. In a separate bowl mix the flour, baking powder, cinnamon, allspice and ginger. Mix into the batter, then stir in the oatmeal and raisins.

4. Press dough evenly into the lined baking pan. (This is the messy part.) The dough will be a bit sticky and there will seem to be almost not enough to fill the pan.

5. Bake in a pre-heated 350 degree oven for 15 to 18 minutes, until golden. Bake a bit less for chewier bars, a bit more for crispy bars.

6. Let cool for 3 or 4 minutes, then lift gently out of the pan. Cool a couple more minutes, cut into squares, then cool fully.
